Ingredients
For the Cake:
- 1 cup heavy cream
- 2 tablespoons confectioners' sugar
- 6 ice cream sandwiches (3.5 ounces each)
For the Topping:
- ½ cup chocolate chips, chopped
Directions
Step 1: Prepare the Pan
Line an 8½-by-4½-inch loaf pan with wax or parchment paper, letting the paper hang over both long sides for easy removal.
Step 2: Make the Whipped Cream
In a large bowl, use a hand mixer or whisk to beat the heavy cream and confectioners' sugar until stiff peaks form.
Step 3: Assemble the Cake
- Place 3 ice cream sandwiches in a single layer at the bottom of the prepared pan, cutting to fit if needed.
- Spread half of the whipped cream evenly over the sandwiches.
- Repeat with the remaining sandwiches and whipped cream.
Step 4: Add Toppings and Freeze
Sprinkle the chopped chocolate chips over the top. Cover the pan tightly with plastic wrap and freeze until firm, at least 1 hour or up to 1 week.
Step 5: Serve
When ready to serve, use the paper overhang to lift the cake out of the pan. Transfer to a serving platter, discard the paper, and slice to enjoy.
