[Recipes] Creamy Mango Lassi Smoothie

Ingredients:

  • 1 cup chopped ripe mango
  • ½ cup milk (dairy or unsweetened non-dairy)
  • ½ cup ice
  • ¼ cup plain yogurt
  • 1 tablespoon honey (optional)

Instructions:

Step 1: Place the mango, milk, ice, yogurt, and honey (if using) in a blender.


Step 2: Blend until smooth and frothy. Serve immediately.


Ingredient Substitutions:

  • Fresh mango: Use one cup of frozen mango, skipping the ice. If using a standard blender, let the mango defrost for 10 minutes before blending.
  • Milk: Substitute with any dairy or unsweetened non-dairy milk like soy, almond, macadamia, or coconut.
  • Ice: No ice? Use frozen mango or a half banana cut into chunks and frozen.
  • Yogurt: Use unsweetened dairy or non-dairy yogurt, either regular or Greek-style. Coconut or mango-flavored yogurt works well too.
  • Honey: Swap with a pitted Medjool date, agave syrup, or maple syrup.


Mango Smoothie Variations:

  • Berry: Replace mango with one cup of frozen blueberries or raspberries. Omit the ice and use maple syrup for sweetness.
  • Green: Add a few avocado slices and 1 cup of fresh baby spinach or 1/4 cup frozen chopped spinach. Adjust liquid if needed.
  • Nutty: Blend in 1 tablespoon of peanut butter, tahini, almond butter, or cashew butter.
  • Spiced: Add 1/4 teaspoon ground cinnamon and 1/8 teaspoon ground cardamom.
  • Turmeric: For an anti-inflammatory boost, blend in a pinch of turmeric.
  • Carrot and Pineapple: Add mango to a carrot pineapple smoothie recipe for vibrant color and extra fruit flavor.

TIP
  • Use ripe mango for the best flavor and sweetness. A ripe mango should feel slightly soft, similar to a ripe peach or avocado.
  • If ripe mango is unavailable, frozen mango is a great alternative and adds a chilled texture.
