For the Dumplings:

  • 1 cup finely chopped cooked turkey meat
  • 4 scallions, thinly sliced
  • 1 clove garlic, grated
  • 1 tablespoon tamari
  • ½ teaspoon toasted sesame oil
  • ½ teaspoon unseasoned rice vinegar
  • ½ teaspoon grated ginger (from a 1-inch knob)
  • ⅛ teaspoon red pepper flakes
  • 18 wonton wrappers


For the Dipping Sauce:

  • 3 tablespoons tamari
  • 1 scallion, sliced
  • 1 teaspoon unseasoned rice vinegar
  • 1 teaspoon honey
  • ½ teaspoon grated ginger

Instructions

Step 1: Prepare the Filling

  • In a large bowl, mix together turkey, scallions, garlic, tamari, sesame oil, rice vinegar, ginger, and red pepper flakes until well combined.


Step 2: Assemble the Dumplings

  • Keep wonton wrappers covered with a damp towel to prevent drying.
  • Working one at a time, moisten the edges of a wrapper with water. Place about 1 tablespoon of the turkey filling in the center.
  • Fold the wrapper into a triangle and press the edges to seal. Bring two corners of the triangle together and pinch to secure.
  • Repeat with remaining wrappers and filling, covering assembled dumplings with a damp towel.


Step 3: Cook the Dumplings

  • Bring a large saucepan of salted water to a boil. Reduce to a rolling simmer.
  • Working in two batches, carefully add dumplings to the water. Cook until they float to the surface, about 2 minutes.
  • Remove with a slotted spoon and drain briefly on paper towels.


Step 4: Make the Dipping Sauce

  • In a small bowl, whisk together tamari, scallion, rice vinegar, honey, and ginger.


Step 5: Serve

  • Arrange dumplings on a plate and serve with the dipping sauce on the side.

TIP
  • Storage: Leftover dumplings can be refrigerated in an airtight container for up to 2 days. Reheat by steaming or pan-frying.
  • Customization: Substitute chicken or pork for turkey, or use tofu for a vegetarian option.
  • Make-Ahead: Assemble the dumplings ahead of time and freeze them in a single layer. Cook directly from frozen, adding 1–2 minutes to the cooking time.
