[Recipes] Easy Kidney Beans and Rice

Ingredients:

  • 1 cup long-grain white rice
  • 2 tablespoons olive oil
  • 4 cloves garlic, chopped
  • 1 15.5-ounce can kidney beans, rinsed, or ½ cup dried kidney beans, soaked and cooked
  • ½ teaspoon Cajun seasoning or blackening spice mix
  • Kosher salt and black pepper
  • 4 scallions, sliced

Directions:

Step 1:

  • Cook the rice according to the package directions.

Step 2:

  • While the rice is cooking, heat the olive oil in a large skillet over medium heat.
  • Add the garlic and cook for 1 minute, stirring occasionally, until fragrant.

Step 3:

  • Add the kidney beans, Cajun seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper. Cook, tossing occasionally, until the beans are heated through, about 2 to 3 minutes.

Step 4:

  • Once the rice is ready, fold it into the bean mixture.
  • Stir in the sliced scallions and serve hot.

TIP
  • For a spicier kick, add a dash of hot sauce or a pinch of cayenne pepper.
  • This dish can be served as a side or as a main meal, perfect for pairing with grilled chicken or sausage.
