[Recipes] Sautéed Collard Greens with Crispy Bacon

Ingredients:
- 6 slices bacon, cut into 1-inch pieces
- 2 large shallots, thinly sliced
- 4 bunches collard greens, stems discarded and leaves cut into strips (about 20 cups)
- Kosher salt and black pepper
- 1 tablespoon fresh lemon juice
Directions:
Step 1:
- Cook the bacon in a large pot over medium heat, stirring occasionally, until crisp, about 5 to 7 minutes. Transfer the bacon to a plate and set aside.
- Add the shallots to the drippings in the pot and cook, stirring often, until softened, about 3 to 5 minutes.
Step 2:
- Add the collard greens to the pot in batches, seasoning with ½ teaspoon salt and ¼ teaspoon pepper. Toss frequently, adding more greens when there’s room, and cook until tender, about 12 to 15 minutes.
- Stir in the lemon juice and sprinkle with the crispy bacon.
For extra flavor, add a pinch of red pepper flakes or a dash of hot sauce for some heat.
You can substitute the collard greens with other leafy greens like kale or mustard greens.
