[Recipes] Slow Cooker BBQ Pulled Pork Sandwiches with Crispy Coleslaw

Ingredients:
For the Pulled Pork:
- 2 pounds boneless pork shoulder or butt (trimmed of excess fat)
- ¼ cup packed brown sugar
- 1 teaspoon chili powder
- 1 garlic clove, chopped
- Kosher salt and black pepper (to taste)
- ½ cup cider vinegar
- ½ cup water
- 1 cup barbecue sauce
For the Coleslaw:
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ teaspoon granulated sugar
- 2 tablespoons cider vinegar
- 4 cups coleslaw mix (about 2/3 of a 14-ounce package)
- Kosher salt and black pepper (to taste)
To Serve:
- 6 soft sandwich rolls, split
- Bread-and-butter pickles
- Potato chips
Instructions:
Step 1: Prepare the Pork:
- Place the pork in a 5- to 6-quart slow cooker.
- Rub the pork with brown sugar, chili powder, chopped garlic, 1 teaspoon of salt, and ¼ teaspoon of pepper.
- Add ½ cup cider vinegar and ½ cup water to the cooker.
Step 2: Slow Cook:
- Cook on high for 4 to 5 hours, or on low for 7 to 8 hours. The pork is ready when it’s tender and easily shreds.
- Once cooked, remove the pork from the cooker, discard the liquid, and shred the meat using two forks.
- Stir in the barbecue sauce.
Step 3: Make the Coleslaw:
- In a medium bowl, whisk together mayonnaise, sour cream, granulated sugar, 2 tablespoons of vinegar, and a pinch of salt and pepper.
- Add the coleslaw mix, toss to coat, and cover.
- Refrigerate the coleslaw until you're ready to serve.
Step 4: Assemble the Sandwiches:
- Toast the sandwich rolls (optional).
- Pile the shredded BBQ pork on each roll, top with a generous portion of coleslaw.
- Serve with bread-and-butter pickles and potato chips on the side.
- You can adjust the amount of barbecue sauce to your preference, adding more for a saucier sandwich or less for a lighter flavor.
- To make the coleslaw extra crunchy, use fresh coleslaw mix or even add a little shredded apple for a sweet twist.
