[Recipes] Slow Cooker BBQ Pulled Pork Sandwiches with Crispy Coleslaw

Ingredients:

For the Pulled Pork:

  • 2 pounds boneless pork shoulder or butt (trimmed of excess fat)
  • ¼ cup packed brown sugar
  • 1 teaspoon chili powder
  • 1 garlic clove, chopped
  • Kosher salt and black pepper (to taste)
  • ½ cup cider vinegar
  • ½ cup water
  • 1 cup barbecue sauce

For the Coleslaw:

  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ½ teaspoon granulated sugar
  • 2 tablespoons cider vinegar
  • 4 cups coleslaw mix (about 2/3 of a 14-ounce package)
  • Kosher salt and black pepper (to taste)

To Serve:

  • 6 soft sandwich rolls, split
  • Bread-and-butter pickles
  • Potato chips

Instructions:

Step 1: Prepare the Pork:

  • Place the pork in a 5- to 6-quart slow cooker.
  • Rub the pork with brown sugar, chili powder, chopped garlic, 1 teaspoon of salt, and ¼ teaspoon of pepper.
  • Add ½ cup cider vinegar and ½ cup water to the cooker.

Step 2: Slow Cook:

  • Cook on high for 4 to 5 hours, or on low for 7 to 8 hours. The pork is ready when it’s tender and easily shreds.
  • Once cooked, remove the pork from the cooker, discard the liquid, and shred the meat using two forks.
  • Stir in the barbecue sauce.

Step 3: Make the Coleslaw:

  • In a medium bowl, whisk together mayonnaise, sour cream, granulated sugar, 2 tablespoons of vinegar, and a pinch of salt and pepper.
  • Add the coleslaw mix, toss to coat, and cover.
  • Refrigerate the coleslaw until you're ready to serve.

Step 4: Assemble the Sandwiches:

  • Toast the sandwich rolls (optional).
  • Pile the shredded BBQ pork on each roll, top with a generous portion of coleslaw.
  • Serve with bread-and-butter pickles and potato chips on the side.

TIP
  • You can adjust the amount of barbecue sauce to your preference, adding more for a saucier sandwich or less for a lighter flavor.
  • To make the coleslaw extra crunchy, use fresh coleslaw mix or even add a little shredded apple for a sweet twist.
