Preparation
1. Combine Dry Ingredients: In a large bowl, whisk together the flour and baking powder.
2.Mix Wet Ingredients: In a separate bowl, add the butter, milk, and egg yolks. Stir until well combined.
3.Beat Egg Whites: In a third bowl, use a hand mixer to beat the egg whites until soft peaks form.
4.Combine Mixtures: Pour the milk mixture into the flour mixture. Stir gently with a rubber spatula until just combined. Add the beaten egg whites and fold them in gently until fully incorporated.
5.Cook the Pancakes: Heat an 8-inch (20 cm) nonstick skillet over low heat. Pour 1 ½ cups of pancake batter into the skillet and smooth out the top. Cover with a lid and cook until the bottom is golden brown and a toothpick inserted into the center comes out clean, approximately 20 minutes. Transfer the pancake to a plate and repeat with the remaining batter to make three more pancakes.
6.Serve: Serve the pancakes with maple syrup.
